Best dinner ever.
So, this whole dish came together out of fear of home made produce going bad.
About a week and a half ago, I found a supplier of Jersey cow unpasteurised milk, so, I bought some to try it. In theory, it's illegal to sell unpasteurised milk in Australia, probably because it can kill you, but they sell it as cosmetic goods, which really, is just a way for them to sell it and not break any laws. It was okay, but it's been so long since I've even had milk, I don't think I was much of a judge.
Nice milk, okay, but nothing remarkably tasty to the point where it would get me to start drinking milk again. But, because the 2 letres cost $9, i felt obligated to do something with it. I wasn't going to waste it. So, I figured out how to make ricotta. It's really easy to make, now that I know.
You just boil the milk to 90 degrees or so, and toss in vinegar. It curds right away, you strain, and there you go, fresh ricotta. It's not real ricotta, but people say it's more or less better than anything you can buy.
But then, what to do with it. We had Yu-Ann's brother in town, and with 3 hands, it didn't take that long to put together heaps of Ravioli. We pulled some basil that was beginning to seed in the yard, tossed some regiano cheese in with the ricotta, a little olive oil, mixed it, and stuffed it inside the ravioli. Then, for the sauce, we had some passatta I made last week from the summer's tomatoes.
Only lately I've begun to realise how long things take to grow, and in turn, it's made me much more frugal in how I cook. These days, I make jams with bad fruit, deserts and cakes when dairy is about to go bad, and in the end, I seem to be buying much less, but cooking and stocking much more food.
